I see that you want to send submissions to your own email as well as the users.
We actually do have both options so I'm not sure where you got that information since it is incorrect.
In order for your jotform(s) to send an email to your own email address you must set up an Email Notification.
Whereas in order for your jotform(s) to send submissions to the user's email address you must set up an Autoresponder.
Both of these can work together at the same time once set up properly on your jotform but they work separately from one another and the autoresponder requires an email field to be able to send back to your users.
I highly recommend reading these two guides below to learn how to use them correctly.

Hi,
As my colleague point out, there are two different types of emails that are sent by our forms.
Notifications which are sent to you:
http://www.jotform.com/help/25-Setting-Up-Email-Notifications
And Autorespnders which are sent to your users:
http://www.jotform.com/help/26-Creating-a-Form-Autoresponder
The first one goes to you, the second one goes to the user based on what is entered in an "Email" field in your form.
