Is there a way to hide an item from the one sheet?

Because I am sharing pieces of my data with individuals outside my organization, I'd like to be able to hide certain data items from our one sheet, but still preserve the information in the backend of dropbox. Is this possible?

I am not sure about one sheet that you are referring to. However, you can share the information of your form submissions to hide some columns by generating a grid listing report or an html table listing report to share with other users. The submissions are not disturbed here and you'll be having the backup data on your dropbox as well.
