How to display day from the date field in email alert? Can I add days to those dates?

Can I add days to those dates? ("Thursday 6-8-2015" instead of just "6-8-2015")

Unfortunately it is currently not possible to get the day name form the selected date field. One possible workaround to achieve your requirement is to use "Form Calculation" widget to use the dateString function to achieve your requirement. Please check the screenshot below:
