To reset the settings of the current Paypal Payment Tool, you need to open the payment tool's wizard on the "Form Builder". With that way, you can change your Paypal account's credentials, change product details, etc.
However, if you want to reset all of things from the previous version, you can simply delete that Paypal field, then add a fresh one.
