How to make sure that our coordinator does not get another Edit link notification upon their own edits?

A minor issue: Upon edit, the coordinator gets another Edit link notifier and "New IRB application notification" - Can these e-mails be disabled when the coordinator edits the form? If not, that's fine. I'm quite satisfied with the outcome already.

To avoid the email being sent again, you could make the email notifier conditional and check if the fields that your coordinator is to fill out are all empty.

That way as long as someone submits the form and these fields are empty, your coordinator will get an email.

Once she logs in and edits the form, the fields are no longer empty and she will not be sent the same email - you could sent a different one or non at all.

No worries! I figured it out. The function is attached to a certain field instead of on the global level. Thanks!
