Is there a way to disable sending an email when a form submission is edited?

There's no specific solution for this but there's a workaround.
You can temporarily delete your email notification when you edit a submission so you will not receive a notification during edits.
If you want a permanent solution but still receiving notifications from the users, you can use autoresponder instead of notification. Just delete your email notification, then create an autoresponder with your email as the recipient so you will continue to receive notifications from the users but not on edit.
To add your email as the recipient on the autoresponder, follow this guide.
1. Add an email field to your form, insert a default value and hide it.
2. Edit your autoresponder and set the email field you just add as the email recipient.
Click Email > Edit Autoresponder > Click Reply-To and Recipient Settings > set the Email field as the recipient.
