Is possible to add Hidden Fields that separate Products into individual fields

You capture the input-- can I calculate a field based on this?

You can create a Custom Payment Form instead. You will use the regular fields (not the payment tool) to add your products/items. And then use Calculation widget to calculate.

Then the calculated total/amount can be passed on to the Payment tool as Custom Payment.
