How to attach another PDF form to the email?

Is there a way to create/save multiple PDF forms? I want to edit the one that we'll have emailed with the online submission but if we decide not to use it, I don't want to have to recreate the original one again as we have it now.

I'm not sure if I understand your query correctly. Do you mean to attach another PDF file with the submission to send to the form filling person? If so, unfortunately, it is not possible to attach files with the email. However, you may upload the PDF file to your hosting and place the link to download the PDF in the email.

Right now I have the option checked to send me the PDF form when somebody submits their application online. So I get an email with the information plus a PDF copy. I want to alter the PDF template (which I know how to do), but is there a way to save multiple PDF templates in case I want to revert back if my changes aren't what we want.

We don't have a feature where you can save a PDF template. You can only use the PDF Designer to customize the PDF. You can use the "Reset" button in the PDF Designer to revert to the original design.
