We have created a sign-up form for our employees for training and development. However, the autoresponder, when sending to our own internal emails is putting them in our employees' spam folders. I talked with our IT/Tech Dept. and they said in order to adjust this, they need jotform ip address for it server. Can you help me?

I'm afraid that our email sending IPs will constantly change, as we use several methods and providers for sending our emails, so whitelisting them is not something that can be done to permanently fix the situation. You can read more on our guide about this:
https://www.jotform.com/help/145-Whitelisting-JotMails-IP-Addresses
Please be aware that JotForm sends dozens of millions of emails each month, which is why we have to use multiple email sending methods. Additionally, whenever there is an issue with one of the email providers, we switch to using another one in the meantime, which is seamless to end users, but makes it unpractical to follow our constantly changing sender IPs by whitelists.
If you cannot whitelist our emails based on our sender email addresses, such as noreply@jotform.com and noreply@formresponse.com, then I would recommend setting up your email notifications to be sent through your own SMTP email sending server:

Please let us know if there is anything else we can do to help. Thank you.
