Why are my email receipts being redirected to my gmail account? They should be going to firstname.lastname@example.org.

May I ask which form are you encountering this issue? I checked your account email history and it looks like the emails are being sent successfully to your business email address email@example.com. You can also check this on your end by following this guide: How to View All Your Form Email History
If they are being redirected to your gmail address, perhaps there is a setting in your business email that automatically forwards the jotform emails to your gmail account. You may also check and see if the emails are being sent to your spam folder instead. If they are, please mark them as Not Spam.
