Hi Gordon,
It is actually doable, I mean not exactly but in a way you can make this happen. For instance, let's talk about this form of yours:

What you need to do first is to add an email field to your form. You can then set the reply-to email to this particular email field. Let me show you how I do this on the cloned version of your form:
1. I have added the email field:
2. Clicked on the "Emails" tab on the form builder:
3.Edited the email notification settings and did the following:
When you do this Reply-to email will be the email that belongs to the user who submits your form. In a way, it will seem like that you received the email notification from the submitter.
