Hello, when I enter a cost for shipping additional items, the form is not updating with the additional cost. It only shows the cost for the first item. Below is the URL. The additional cost is set at $2.50.

You actually have only one item (product) and you have enabled special pricing for that item. If you want to have shipping for additional items that you will need to add quantity option for your product and remove special pricing.
Change that price of your product to 279.70 and set quantity like this.

The new system doesn't allow me to have a list of custom quantities with special pricing along with custom shipping prices.
Qty 100 $100.00 $2.50
Qty 200 $170.00 $4.00
Qty 300 $250.00 $5.50
Qty 400 $300.00 $8.00
Qty 500 $350.00 $9.50
Is there a way to do this using the Quantity option that you know of?

As far as I know that was not possible in old interface as well because the way it is set it is still one item. You will need to add quantity option to you product field if you want to apply shipping per additional item.
Here is new demo form where I applied quantity to special pricing option that you have set.
If you were able to set this on old interface, that I would suggest you to switch to old interface and set your payment field there. To switch back to old interface add &old at the end of the form ID inside of the Form Builder. After you add &old reload the page.

Thanks for testing on your end. I see how the quantity option works. Since the quantity option doesn't allow me to give discounts on increased quantities, I guess I'll have to compensate by adding the additional shipping costs into the product price as the quantity increases.
