I need to add the headings I have in my form to the emails/PDF attachments.

If you want to shown headings from your form inside of PDF report, you need to check "Show Headers and Texts" option in the form submissions page. Inside of this guide you can find how to do it: https://www.jotform.com/help/305-How-to-Show-Headers-and-Text-in-the-PDF
