You must be referring to the Header on your form https://www.jotform.com/63576828947173
You can use the advance Form Designer to change the style of the Header field on your form.

Thank you so much for the very prompt and thorough response. I didn't
realize you could click on a section in the advanced designer! That works
for the main heading, but it's not working for the section headings that
are currently in blue, "Your What & Your Why", "Challenges", etc
How can I change the color of those to a custom color?

You can make the changes in the Form Edit View
Select the subheading, you want to edit
Select Text you want to edit > Click on "Edit HTML" > Text Color > Select the color

You can use the advance CSS editor to change the style of the Sub Heading of the Header field.
