I've used forms with Stripe integration before but my new form doesn't seem to be working. I've used the widget integration to allow for different payment options and it seems to be working well. But when people pay by credit card, my Stripe account does not show the transaction. I have tested it myself and the transaction does not seem to reach Stripe.
I made sure to connect the Stripe account. I verified the connection. I switched the "test mode" to "live mode". Nothing changed. Also, when I come back a few days later, it seems like I have to reconnect the account. Does it get disconnected after a while?
All I know now is that there is no activity on my Stripe account but people do fill out the forms (and I've tested it myself)

I assume this was the form https://www.jotform.ca/form/63004197656256 that have the Stripe issue. Please let us know if its another form.
So far I could not review existing submission data on the form because the data were encrypted. The form was using Form Encryption.
Can you confirm that there were successful payments done on the form already? Can you review the submission payment details in the View Submission panel?

We received about 15 form submissions but no successful payment with this form. None. I tested it myself (albeit using bogus info) and still nothing. Usually I would at least get a notification from Stripe that a payment could not be processed.
When I look at the View Submission panel, I can see that some people have chosen Credit Card payments but not much more (see attached picture).

I checked your form and I found out that your payment field is from a separate form embedded as iframe.
Unfortunately, this is not how you think it would work as its really not possible. Each form works separately. They have their own assigned post URL. This means that when you submit the main form, only the fields within the main form will be submitted. The same case when you submit the embedded form, only the embedded form values will be submitted.
However, since your payment form does not have submit button, your users are only submitting the main form. This is the reason why you are getting results only from the main form.
To resolve this, get rid of the embedded form and add the stripe payment field within the main form.
Please follow this guide if you want to accept check & CC payment https://www.jotform.com/help/120-How-to-Set-up-Paypal-Along-with-Other-Payment-Options. You don't need to create a separate form for the payment.
