it's literally just coming through as a bunch empty blocks, instead of showing the words that are included in the email submission form.

I have sent a test submission to your form (Please ignore it). However, I did not replicate the same issue with you. As you can see below screenshot:
I have cloned your form and tested on my side. I did not replicate the issue again.
When I checked your history and realized that you have trouble only with your last test submission. I think it was a temporary issue, it seems fixed now.
