This doesn't really help me as this is one or the other. I'm a non-profit that is selling tickets (set price) and want a product item for an additional donation (user fills in amount). If you could add this ability in future versions that would be great.

It is possible to have a products and custom text box combined in 1 payment field. Please check this demo form: https://www.jotformpro.com/form/70105319062950. You can clone it if you like to.
Here's a guide on how to add the custom text box field:
In the payment wizardproducts, click the "Create New Product" button.
In the next screen, you need to enter the "Name" and the "Price". The price should be "1" because this will be multiplied on the quantity field entered by the user.
Click the "Add Quantity" button after.
In the Quantity section, select "Text Box" in Show Quantity on the Form drop down. Enter the "Label" you preferred and put "1" as the Default Quantity. After that, click the "Save Quantity" button.
When you're done, click the "Save Product" button. Here's the result:
