We have a form we like and are ready to publish but just want to re-check some things: (1) Settings in PayPal to make sure it's going to the proper place and (2) Run a sample in "Sandbox" mode. Before we completed our form layout, we were able to see these settings but now cannot. ??? Thanks for any and all help!!

I suggest you create a PayPal sandbox account first.
You may also refer to this guide: https://developer.paypal.com/docs/classic/lifecycle/sb_about-accounts/
Then enable the Sandbox mode of your PayPal payment field through its wizard ("wand icon").
