Hi, when using the address field we recognize that the country list values in the editor are german which ist correct, but when publishing the form, the country list values are english all other label titels are german which is correct. Please provide us support to have the country list values also in german, as this is somewhat a language barrier for our users.

If the default language is in German, the country list should have been in German. I've seen that there is an issue on our side. So that, I have forwarded this issue to our software development team in order to fix it. You are going to be informed via this thread as soon as the issue will be solved. Please know that: We are not able to estimate time for solving any issue.
On the other hand, you can actually fix your form before our software development solves the actual issue. As a quick solution you can follow these steps below:
As you might know, you are able to add a translation to your form in the Preferences menu. (For further detailed information please check this guide.)
As the original form language can not be edited, I have added a second language (for example English US) in order to edit the country names and made it enable as you can see the screenshot below:
I have selected to edit Address field and I was able to change all of the country names to German one by one as you can see the screenshot below:
After saving these settings, the country list will appear in German as you can see the screenshot below of your form:
