If I set up a user account for one of my employees and they lost the email they received from JotForm, how can they go about logging in?

They could simply log-in into the JotForm account under the email address where you shared access to, once forms are shared they are accessible to the sub-user under the "Shared with me" section in a folder with the main account username.
You can also check the sub-users you have set up by going to this link: http://www.jotform.com/myaccount/users
If they do not remember either username or password they could use the email address to restore the password and they will also receive the username.
