I have multiple fields to add up and the selection contains text (ex:"Not Riding") to guide them since there are multiple selections. Then I have other fields that will be added or subtracted from that fields to get a final total. The text may be hindering the calculation but I'm not sure how to get them calculated without redesigning the entire form. HELP!Page URL:

You can give calculation values to the fields that contain text if they are drop-down lists, checkboxes or radio buttons.
I've checked your form and cloned it on my side in order to test. As I have seen you have already set calculation values to the following field:
In order to make the selections calculate, please use Form Calculation Widget in order to get a final total in your form as you can see the screenshot below:
You should add the checkbox field to the form calculation widget's settings. So, if a user selects any option, calculation value will be calculated automatically inside the form calculation widget as you can see the screencast below:
