We stopped receiving emails after they have been submitted. I have checked our email server and they are not coming through, so our mail server is not blocking them.

It looks like your email service provider is rejecting our notifications. Make sure to check your spam folder, and mark as NOT SPAM those JotForm notifications.
If the issue continues, we recommend you using your own SMTP settings for the sender: https://www.jotform.com/help/244-How-to-Setup-SMTP-for-a-Form
