I'm attaching Salesforce account ids in form URL parameters. I want that accounts to be updated in salesforce with the information filled on jotform. However, I cannot see Salesforce Account Id when mapping fields.

JotForm already handles duplicated records for SalesForce, if the information already entered matches a record in SalesForce then the info will be updated; however, at the moment it is not possible to update records using the SalesForce account ID.
If you want we could forward this to our second level as a feature request, though we cannot provide an ETA or ensure this will be implemented, we would let you know as soon as we receive updates regarding the feature.
