However, something happened when I switched back to v3. Now the Email notifications is using the old setup. See below
This allowed me to enter this screen where I was able to add my "formatted" plain text

There was no attached image in your response. So we were not able to see the issue.
You can follow this guide to include image in your response.
I have also reviewed your form https://www.jotform.us/form/70395621956161 and I can see the Notifier email template like this.
Can you please tell us what exactly was the problem. Was the email template changed and was not suppose to be like this?
Since you have switch back to version 3 of the Form Builder, only the UI of the builder will be changed and not the content of the form email template.
