Set Certain Number of Items that Can Be Purchased?

Hi, I am looking to have a camp registration form that only allows for a certain number of a specific item to be purchased.  For instance, if we have 10 spots available I would like for the option to be removed or grayed out once that limit has reached.  Can you tell me what would be the best payment merchant to handle this?  Thanks!
