Why when I edit the form, it changes the content of the emails 1 and 2 itself (Without me to touch it) and creates a self-report (Without me to create it)
How to prevent this from happening?

Are you referring to this form - http://www.jotformz.com/form/70370538955665? I cloned it and did some edits to the email notifications and autoresponders but unable to replicate your issue.
Did you happen to click the plus (+) sign just above your email notifications and autoresponders.
The third email template in your form seems to be a new autoresponders generated when you click on that plus (+) sign.

The problem is: the left template made by me, I noticed that after adding a field in the form (not in the email) changes the template on the right, but only changes that is in the red circle, Of this outside remains the equal, and happens without me modifying it.

Once you modify the email notification template, it won't be able to fetch changes from the form. With that, you will have to manually enter the field variables on the modified email template.
Sorry but I'm not quite sure what you mean with the third template, if you don't need it, you can simply delete it in your form.

I was able to reproduce the problem on a cloned version of your form but it is not happening when I test it on my forms.
I'm not quite certain but I think the system tries to fix the messed up notification template whenever you make changes to your form.
Please try to recreate the email notification. Create a new notification then delete all its content including the table which is specifically the one that keeps reverting to its default layout. Then start customizing using a new table from the toolbar.

The problem is happening again. Create new templates and modify the form, but change the mail structure.
When this happens another template is created itself

I'm sorry for the trouble caused to you.
I cloned your form and I was able to replicate the issue you are having. When I edited the form, the table layout structure in notification email alert template was reset.
I am reporting it to our backend team. We will get back to you as soon as we have any update from them.

We are sorry for the problem.We have implemented a new property for emails called ~Update Email~. You can reach it from Email Settings under the Advance Tab. Its default value is Yes. Form changes will update your emails when this option is Yes. However, in your case, your email template is quite old. Because of that, changes are modified your email in an unexpected way.
So you can turn off this option and save your email. After that, your email will not be affected by form changes.
