We are setting up forms for different events at the moment and each of these will have different people that need to be notified when a payment is made to that particular form but for some reason when we send a test mail it goes to the admin of the overall accounts email firstname.lastname@example.org (me) instead of to those that are set up as the recipients in the email section. Could you help me please?

If you are trying to test the email alerts using " Test Email " button, please note that this will always send the email notification to email address in your account profile. You have to make an actual submission in your form to test the recipient email address you are settin up in the form. Please refer to this guide for more information: How-to-properly-Change-and-Test-a-New-Email-Recipient-Address.
