Unfortunately it is not possible to set conditional logic based on coupon code that was used.
As possible workaround you can add one additional (text box) field to your form and ask your users which coupon code will they use.
Then you can set conditional email Notification for that field.

Is there a way to set this external field automatically after the user has typed in the coupon code as an alternative?
Perhaps a Radio Button or Dropdown Menu will be a better approach instead of using a Textbox. That way, users won't need to type in anything (they just pick one). Less work for them, more accurate results for you.
If you have a long list of coupon codes, then this may not work really well. But if it's just a handful of coupon codes, then kindly try my colleague's suggestion and use a Radio Button or Dropdown Menu instead.
