I need to change address element labels to Canadian settings

Right now, the Address widget shows a mix of Canadian and US settings:

1. It shows 'Postal/Zip' in the properties, but only displays 'Zip Code' on the form.

2. Canadians need to see  "Province'   or 'Province/State' 

3. Is there a drop-down list for Canadian Provinces? 

Is this possible - can you help? 

How about using the Canadian Provinces Picker widget instead.
