All my forms are saying they are disabled and I cannot figure out how to get them enabled.

I have checked your account and found it was disabled due to violation of our terms, this happens when you're asking for credit card info or any other sensitive info that's not allowed on JotForm, on your case seems you were asking for payment info through plain text fields.
I would suggest you to check our terms in order to know what you cannot ask on your forms and avoid getting suspended again: https://www.jotform.com/help/8-Terms-of-Use
I've reviewed your forms and noticed that payment fields are no longer on them, so I have reactivated your account.
