An e-mail sender is no longer with our company. How do we change the e-mail sender to a new address?

I can see that you are using a custom sender email address in the Autoresponder. You can delete and add a custom sender in the Account Settings page.
In the Sender Emails section, click the "Edit" link. After that, the list of emails will appear. You can remove an email or add a new one.
After that, you need to change the Sender Email in the Autoresponder wizard. Here's a guide: Setting-Up-an-Autoresponder-Email.
