Is this a legitimate response for submitting our form? or has my form been "hacked"? Our customers feel that it is not a legitimate 'Thank you' from us. Can it be changed? Removed?

Unfortunately, I wasn't able to replicate the issue when I did a test submission on your form. It seems that you were able to change the Thank You Page by yourself. Here's a screenshot:
You can customize the Thank You Page using the Thank You Editor. You can also redirect it to an external link. Please check this user guide: https://www.jotform.com/help/211-Setting-Up-the-Thank-You-Page.
