Could you please explain how I can achieve the following function from a JotForm form...
User enters first half of data into a form and saves their current progress (which also triggers the usual e-mail autoresponder)
A fews days later the user retrieves their original form and fills in the second half. They submit the form, which also triggers the autoresponder again.
Can this, or at least something very similar be done?

You can use this article from our guide -How-to-Save-Forms-to-Continue-Later to create and test out your form.
The guide can be shorten to what you need like this:
1. Create your form
2. Add the autoresponder email
3. In the autoresponder email, include a message/context of a clickable Edit link.
Everytime the form is submitted, it send an auto email that have a link to edit the form. This will provide the means to edit the form another time by going to the email message and clicking on the edit link.
