My goal is to create a registration form for an event one of our clients is having. I want to use my email to verify the account, as I guess it will need, but I want the forms to be emailed to the client's email. Will this kind of thing work?

Yes, each form has separate email settings and you can use any email recipients on them without additional verifications.
