I am trying out JotForm for one of my sites. We are sending out an email blast, and we are expecting several hundred people to fill out the form (we are paying for a Bronze package). But what happens if we have more than 1,000 people fill out that form?
Does that data stay somewhere, and we just have to upgrade our plan?
Or once the plan hits 1,000, does it just not record any more?

I checked your account and you're under the Bronze plan. The monthly submission limit of the Bronze user is 1,000. If you reached the limit, JotForm will send an email and will notify you. Either, you upgrade your account or wait for the monthly submission limit reset back to 0 every first day of the month.
Your form will display a warning message once it is over limit and user won't be able to submit to your form once it hits the 1,000 submissions. See image below:
The submissions data can be viewed in the submissions page. For Bronze user, you have an unlimited submissions storage.
