Yesterday and today our forms have been coming through without the signature line. Usually, if someone did not sign, there’s a blank box/line in the form, but these don’t even have that.

I could not replicate the issue at my end. This is the screenshot of what I see at my end.
I would suggest you to clear the form cache and the browser cache and check again.

Hi,
The signature line is appearing on the website form, but not when someone fills it out and we receive an email with their response. The emails we receive no longer have the signature line on them. Even if someone does not sign it, the line used to come through blank---now it does not appear at all.

Check if the signature is actually sent, so please check your form's submissions: https://www.jotform.com/help/269-How-to-View-Form-Submissions
If the signatures are there, it means that the notification needs to be updated. So, simply delete it, and create a new one again: https://www.jotform.com/help/25-Setting-Up-Email-Notifications, all the form fields will be properly updated in the new notification.
Also, make sure to disable the "Hide Empty Fields" option from the advanced settings if you still want to see fields that were left empty:
