I keep having to manually delete a tranche of our contacts from the bounce list. Why does this keep happening and it is very hard to do them one at a time and guess who might have been excluded. This is not ideal for an enterprise solution with many forms and many users!

I would recommend two solutions in light of what you kindly explained:
1. Whitelisting our IPs and domains, in order to prevent the rejection of our sent emails, which eventually leads to adding your emails to our bounce list: https://www.jotform.com/help/145-Whitelisting-JotMails-IP-Addresses
2. Setting up SMTP for your forms, which would take our servers and bounce list completely out of the equation: https://www.jotform.com/help/244-How-to-Setup-SMTP-for-a-Form
