    See form-https://form.jotform.com/70785856979179

I would like to have the "time when notified" be the time when that is checked off.
The way it is now the time ends up being static to when the form is originally created, not when it is edited.

The purpose is so I can see when a client is informed that their dog is ready to be picked up.

Our work flow is we fill out the form when client drops off their dog.
Submit form which gets added to the "list view" of submitted forms.
When their dog is ready to be picked up we go to the list-and click the "click to notify via a text" link that was created.
I want to also be able to click the box saying that we notified the customer, and have the time appear when the box was clicked.
I did what I thought would work and the time field is not updating to when the form is edited, it stays at when the form was originally created.
    Ideas?

Unfortunately, we do not have an option to display the current time when the form is edited.

However, this is possible to receive a submission update time using a {DATE} tag within email template.

In other words, you can receive the submission update time by email once the entry is submitted in edit mode. I hope that this is something that might work in your case.
