When it comes to newsletters, we have an integration with MailChimp: https://www.jotform.com/help/163-How-to-Integrate-with-MailChimp 

 

There you can let the user decide if he wants to subscribe. Let us know if you need more help.

Thanks for getting back to me.

We're kind of in between email systems at the moment so I don't want an integration. I just need some kind of tick-box so we know that they want to subscribe and then we can add them manually. Is this possible?

Yes, that's possible. Just add a checkbox (multiple choice) field with a single option for them to select/unselect. Something like this:
