Hello,
As far as I understand, you want to set prefilled values to the fields. However, they have to be cleared while users are entering another information.
You can set placeholders to the fields as you can see the screencast below:

time, but need to pre-fill some of the fields differently on each form,
how would I do that? Would I have to just make several cloned forms unique
for each person I send to?

We support prepopulating fields via URL parameter. Please check this guide to know more: https://www.jotform.com/help/71-Prepopulating-Fields-to-Your-JotForm-via-URL-Parameters.
If you're sending the form through an email newsletter, you can use this method to pass some information into the form fields. It is commonly known as merge tags.
