Mainly, I know every form is secure via SSL by default, but how is the data saved in on your servers? Is it encrypted by default? I know that we can have encrypted forms, but my question is how data is saved when it isn't an encrypted form.

The data will be stored normally if the form is not encrypted but will be securely sent to the servers using SSL certificate. If the form is encrypted, the encrypted data will be stored so that you only will be able to access the data by uploading the encryption key. If the encryption key is lost, unfortunately, the encrypted form data cannot be decrypted in any way.
