Is there a way of saving a jot form submission and coming back to edit and submit at a later date without loosing the previously inputted data?

We were hoping for multiple users to add and edit this form before submitting. There would be a large amount of photos that will be attached to this form.

Yes. The functionality you were referring to is the Edit Link of the form submissions.
