We are attempting to change out Stripe Account payment info. However, when we click on EDIT next to Stripe under the PAYMENTS menu, we don't get the option to change the account info.

I am not sure if I understand your query correctly. Do you mean to edit the Stripe account used on the form to receive the payments? I have checked your form and see that the form is using PayPal payment method to receive the payments. If you are referring to a different form that is using Stripe payment, you may click on Connected button again to change the Stripe account.

Yes, we'd like to remove Paypal and add Stripe as the payment processor.
However, we'd like to edit the account connected to a Stripe account.
How do we go about added firstname.lastname@example.org to our Stripe Account vs.

If you want to use Stripe instead of PayPal on your form, you'll need to remove the PayPal field from the form and then add the Stripe payment to the form. The products from the PayPal field will be automatically added to the Stripe. All you need to do is connecting your Stripe account with the JotForm.
However, please be noted that if a field is deleted from the form the data stored in the field will also be removed. So, if you are already having submissions for PayPal field, the data for this field will be deleted after deleting the payment field. Alternatively, you may consider cloning the form to your account and then configure Stripe account with the new form to use it on the web page.
