Can I reset field to Show Text in Empty Option

Is it possible to reset a field to the Show "Text in Empty Option" with a "condition"

I am building a form that has two drop down menus that will be hidden if the user selects the default value, if they try to clear this field back to --- Select --- it show s an error that the field  is required.

The notification email will show as a 0 quantity but still have the Colour and size returned if the user decides not to want a particular item.

One of the items has the size and colour hidden just to show what the final form will do.
