What do you mean by users?

That has to do with the number of sub-users you can share your forms with. Let's say you have an employee that can manage forms for you, but you do not want to hive him access your account, you can simply add his account as a sub-user under yours, and grant different access to your form. What do you mean by submissions?

The submissions is the number of total responses you can get from all your forms. On a free account you can receive up to 100 submissions per month.

Also, on a free account there is a storage limit, which is 500 submissions. Once your account reaches its max storage capacity, any new submissions that arrives will make the oldest submission in your account to be automatically deleted. 

How customizable are the forms?

You can fully customize the design of your form through the form designer, example:

It is referring to the amount of payment you can received in your form that has been integrated with any of the following payment gateways: https://www.jotform.com/help/47-Order-Form-Basics 

Square is one of them.
