As I see the screenshot, I notice that you are trying to perform the calculation on a condition. So, the option is not available. On the other thread, the option is shown in the properties of the form calculation widget. The read-only option of the field is available from the field properties only. You may check the field properties to make the field read-only.
Hope this information helps!

Hello, I cannot find the read-only option in the "Dropdown Properties" of the item.
In older versions, it used to be here:
Has it moved to someplace else?
Thanks! -

You can find the Hide field option in the Advanced section of the field properties. Please see the screenshot below:

So there is no way to show the field but make it read only? I'm confused?

Sorry for the confusion. Since you mentioned Dropdown properties, I thought you were referring to Dropdown field on your form. I believe that you are referring to your JotForm https://www.jotformpro.com/form/71226124312947 in your account. Generally, the read-only option can be enabled from the Advanced tab of the field properties. Could you let us know which field that you want to make read-only?
We will wait for your response. Thank you!

Field is Net Carbs:
netCarbs21
it's a calculated field based on Total Carbs - Fiber
Thanks :) If you can't make it read only can we still show it but skip over
it to the next field below it?

I have cloned your JotForm to my account and see that the Net Carbs is a calculation field. So, it can be set as a read-only field from the calculation wizard options. Please see the screencast below to see how to set the field as read-only and test result.
Hope this information helps!
