I think you mean this
First go to settings -> Emails then add a notification
Second, in the recipients tab, change "Recipient Emails" to your email.
Third, in the advance tab, go to the bottom of the page then change the Sender Email to your Email, so that every send your email must be seen and not the default email which is email@example.com

In addition to what @RyanC has said if you want to change the email address of your Jotform account, you should go to the "Account Settings" page after you log in to Jotform.
