I created an account to test the viability of using this for our company application, and I wanted to update the email so our entire mgmt team can receive submissions.

You won't need to change your account's registered email to change the recipient of your Form Submission Data. What you need to change are the recipients of your Email Notifications. To be safe, I'll discuss them both nonetheless:
1. To change your account's registered email, just go to your Account's Profile page https://www.jotform.com/myaccount/profile then click EDIT on the EMAIL section
2. To change the recipient of your Email Notifications, just follow the guide below.
