If you meant to change the email address where the reply email will go, here is how to do that:
1) Edit your Notifier/Autoresponder,
2) Click Recipients:

-For Notifier set that the Reply-to Email is set to the email address field where your users will enter their email address:
-For Autoresponder it's similar, instead of the email address you can put {email} which should be the name of the email field in your form:

has sent me their info. But I can't find the autoresponder set up page you
show. Where will I find that and when I do, should the entry in the
highlighted box literally be mail@email.com or should it be something that
indicates the submitted email address. Thanks.
