I'm totally new at JotForm, and will sign up for the premium plan after I solve this little mystery of how to get email notifications. Am not very tech savvy and would appreciate all the help i can get.

We are really sorry for inconvenience caused. To solve this issue can you please try to change your Sender Name to JotForm, and your Sender-Email to firstname.lastname@example.org and then do a test?
Also, whitelist Jotform's mail sever Ips as follows;
